Vanilla Crescents and Tea
It is Saturday morning. A good time to bake some cookies today. Is it Saturday? Days are kinda blending together, so you can bake any day!
There was a spare room in my Grandparent’ house. It was always cool in there. We were made to take naps in that room, wanting or not. It smelled of mothballs, but it also smelled of cookies, as that room served as a cool storing space for cookies my grandma baked. We snuck into that room often and so did my Grandpa. Atek, as he was called by us grandkids, snuck in there even more frequently. And boy, he would be scolded for it by Mama Hani! Whenever he could, he would blame us, kids, for stealing. He was a diabetic, but he loved the sweets. We took the blame. We loved Atek!
Here is a recipe for Vanilla Kiefel (crescents)-I like to double the amounts:
What you’ll need:
280g (10oz) flour
210 g (7oz) butter
100g (3,5oz) almonds, walnuts or pecans
70 g (2,7oz) sugar
2 egg yolks
Vanilla powder sugar for coating ( you can make your own by adding a vanilla stick to a jar of powdered sugar
How to make them:
If you have a Kitchenaid mixer, great; Hand mixer, great; fork, and a hand, great!
Start by mixing butter, sugar and egg yolks till smooth and slightly creamy (cut butter into small chunks)
Add finely ground walnuts or nuts of choice and mix then slowly start adding flour and kneed it all together till smooth and not too sticky
Refrigerate for about 30 minutes
Form a nice long roll about 1 “ in diameter and cut into about 1/2 “ sections. They should easily roll into a finger long and thick rolls - depending of course who’s hands you use as a measurement- I like the cookies smaller- one bite-size, so I use my middle finger for measurement. (The middle finger comes in handy for all kinds of things) Shape into half-moon or crescent
Your oven has already been preheated to 375 F
Place your crescents onto baking paper on. baking tray. Set the timer for 8 minutes to check. They will puff up a bit, so make sure you leave a bit of space between them. They should just start to get golden on the edges and top. Total time, depending on your oven will be around 10 minutes.
Roll or sprinkle with powdered vanilla sugar while still warm, so the sugar sticks to them. Some will break when you are performing this task. Those are yours! Don’t break too many!
